You will need...

700ml tequila (choose a good quality for the best flavor)

1 vanilla pod (fresh for optimal infusion)

100g fresh coffee grounds (medium-dark roast recommended)

200g caster sugar

200ml water

Makes 700ml to 800ml

Method...

1. Prepare the vanilla infusion: The day before you plan to make your Coffee Tequila, split the vanilla pod lengthwise and add it to your bottle of tequila. Let it infuse overnight at room temperature.

2. Brew the coffee: The next morning, weigh out 100g of medium-dark coffee beans. For this recipe, we recommend a blend like Creole or Santiago, which offers a delightful sweetness that complements the vanilla and tequila. Grind the coffee beans to a coarse consistency suitable for a cafetière (French press). This will help extract the flavours without making the tequila slushy.

3. Combine: In a jug, mix the ground coffee with the vanilla-infused tequila (discard the vanilla pod). Stir well to combine. Cover the jug and place it in the fridge or freezer (if space allows) for 6 hours to allow the flavours to meld.

4. Make the sugar syrup: In a small saucepan, combine the 200ml of water and 200g of caster sugar. Bring to a simmer, stirring until the sugar has completely dissolved. Once ready, remove from heat and let it cool. For a shortcut, you can also use store-bought Monin sugar syrup to taste!

5. Strain and combine: After the brewing time is up, strain the coffee tequila through a coffee filter or muslin cloth over a sieve into another jug. Make sure to squeeze out every last drop for maximum flavour. This can take awhile, so be patient.

6. Stir in the cooled sugar syrup to your desired sweetness. Mix well before pouring back into the original tequila bottle.
