Whether it’s traditional Masala chai or modern-day chai lattes, this timeless drink continues to evolve, yet remains rooted in deep cultural significance. 


Preethi’s version of an Indian Chai is inspired by traditional South Indian chai with a modern twist. What makes her Indian Tea so special is the use of coconut milk and condensed milk. I couldn’t help but wonder, why both? Her answer took me back in time, to her Grandma’s kitchen, where every cup of chai carried stories of family and tradition. Coconut milk is a quintessential ingredient in South Indian cuisine, celebrated for its creamy texture and delicate sweetness. According to Preethi, coconut milk doesn’t just complement the chai—it elevates it. This ingredient not only adds a velvety richness but also pays homage to her heritage, where coconuts are a staple in curries, desserts, and beverages.


To balance the flavours, Preethi adds condensed milk, a convenient alternative to her Grandma’s use of jaggery (palm sugar). Jaggery, known for its deep, caramel-like sweetness and high iron content, is a common feature in South Indian sweets and chai. The condensed milk is her personal tribute to those cherished cups of chai from her childhood. By blending these two ingredients, Preethi bridges the gap between heritage and modern convenience.

You will need...

50ml Brewed Chai (8g Loose Leaf Chai) 

100ml Coconut Milk

40ml Condensed Milk

Cinnamon (Optional)

Method...

1. Brew the Chai Decoction

Add 8g of loose leaf chai to 50ml of water in a saucepan.

Bring the mixture to a gentle simmer and let it brew for 4 minutes. This allows the full flavour of the spices and tea leaves.

Strain the tea and set aside. 


2. Mix the Ingredients

In a saucepan or milk pitcher, combine the brewed chai with 100ml of coconut milk and 40ml of condensed milk. 


3. Steam to Perfection

Gently heat the mixture over low to medium heat, whisking constantly to prevent it from scalding. Aim for a temperature around 65 degrees (or using a steam wand).

Froth lightly to achieve a smooth, velvety consistency.


4. Serve with a Finishing Touch

Pour the chai into your favourite mug. 

Dust with a pinch of cinnamon.
