You will need...

Vodka

Sugar

Fresh Lime Juice

Your favourite H. R. Higgins Coffee.

For this recipe, we use chilled filter coffee. We would suggest making this in advance so it is cooled, ready for mixing. To brew your coffee, you can use pour over or filter, or cafetiere. Brew as normal with hot water and leave to cool. Once cold, you can keep in the fridge until ready to use.

Ginger Beer

Ice to serve

Lime Wedges to Garnish

Method...

Take you cocktail shaker and squeeze into the juice of half a lime.

Add one teaspoon of sugar to the shaker and wait for it to dissolve.

Add a hand full of ice to the shaker and pour over 100ml of ginger beer.

Next, add 100ml of brewed and cooled coffee.

For the final ingredient, we add the vodka. Take 30ml or 1 measure and add to the shaker.

Shake all the ingredients together.

Now we are ready to serve. Add ice to a glass, or if you have the traditional copper cup, all the better. Pour the cocktail over the ice through a strainer and garnish with a lime wedge.

ENJOY!

Preethi's Indian Chai

Chai. A simple word, but one that holds centuries of culture, warmth and comfort. In Hindi, ‘chai’ simply means tea, but the drink we know today as ‘chai’ has a fascinating journey.

Originally, chai wasn’t made with tea leaves. It was an ancient Ayurvedic elixir, brewed with a blend of herbs and spices that were believed to have medicinal benefits. This changes during the British Raj in the mid-1800s, when black tea leaves were introduced, along with milk and sugar, creating the creamy, spiced, and caffeinated beverage we know and love today.

Cranberry Sauce with Earl Grey Tea

I’ve never understood why anyone would buy a jar of cranberry sauce when making it yourself is so simple — and so much better! Every year, I whip up a batch of this, and it’s always a highlight on the Christmas table. It’s amazing alongside the main meal, but I also love it with melted Camembert or even stirred into gravy for a tangy kick. Nigella’s "Redder Than Red Cranberry Sauce" has always been my go-to, and while I’ve barely tweaked her recipe, I’ve found one little change that makes it even better.
