Your favourite H. R. Higgins coffee for espresso

Coffee Liqueur

Vanilla Ice Cream

Dark Chocolate for serving.

Method...

Take 2 sponge fingers and place them on a plate.

Create your coffee mixture. For this, we use our 1942 Blend to make the espresso. You can use an espresso machine or moka pot for this. Then combine one part coffee with two parts coffee liqueur.

Taking the coffee mixture, drizzle 3 tablespoons over your sponge fingers.

Next, take one scoop of vanilla ice cream and lay on top of your sponge fingers.

Again, take your coffee mixture and drizzle another 2 tablespoon over the ice cream.

Finish the tiramisu with shavings of rich dark chocolate.

Serve and enjoy!

I absolutely love meringues! I’ve always wanted to try making coffee meringues, but most recipes recommend using espresso powder. Working for H.R. Higgins, I can’t imagine having instant coffee in the house! So, I came up with my own version using a fresh shot of espresso.
