Vodka

Sugar

Fresh Lime Juice

Your favourite H. R. Higgins Coffee. 

For this recipe, we use chilled filter coffee. We would suggest making this in advance so it is cooled, ready for mixing. To brew your coffee, you can use pour over or filter, or cafetiere. Brew as normal with hot water and leave to cool. Once cold, you can keep in the fridge until ready to use.

Method...

Take you cocktail shaker and squeeze into the juice of half a lime.

Add one teaspoon of sugar to the shaker and wait for it to dissolve.

Add a hand full of ice to the shaker and pour over 100ml of ginger beer.

Next, add 100ml of brewed and cooled coffee.

For the final ingredient, we add the vodka. Take 30ml or 1 measure and add to the shaker.

Shake all the ingredients together.

Now we are ready to serve. Add ice to a glass, or if you have the traditional copper cup, all the better. Pour the cocktail over the ice through a strainer and garnish with a lime wedge.
